## Fried Tofu & Egg with Minced Pork * **Hanzi:** 肉末鸡蛋豆腐 * **Pinyin:** ròu mò jī dàn dòu fu --- ![](IMG-20260425184300291%201.png) ### **Ingredients** **Main Components:** * 1 block of Firm Tofu * 3-4 Eggs * 150-200g Minced Pork * Oil for frying **Aromatics:** * Chopped Green Onions (separate whites and greens) * Minced Ginger * Minced Garlic **Sauce Mixture:** * Light Soy Sauce * Oyster Sauce * Dark Soy Sauce (for color) * Salt & Pepper (to taste) * 1 tsp Cornstarch * Water --- ### **Instructions** 1. **Prep the Tofu-Egg Base:** Place the tofu block in a bowl and crack the eggs directly onto it. Wearing a glove, gently mash and mix the two by hand until well combined. 2. **Fry the Tofu:** Heat a pan on low heat with a bit of oil. Pour in the tofu-egg mixture and spread it evenly. Fry slowly until the bottom is golden brown, then flip to cook the other side. Once both sides are golden, remove and set aside. 3. **Prepare the Sauce:** In a small bowl, whisk together the light soy sauce, oyster sauce, dark soy sauce, salt, pepper, cornstarch, and water. 4. **Sauté the Pork:** In the same pan, add the minced pork. Cook until fully browned. Add the green onion whites, ginger, and garlic, stirring until fragrant. 5. **Simmer:** Slide the fried tofu-egg pancake back into the pan (you can break it into large chunks if preferred). Pour the sauce mixture over the top. 6. **Finish:** Let it simmer for about 2 minutes until the sauce thickens. Turn off the heat, spoon the savory sauce over any exposed tofu, and garnish with fresh green onions.
